Directions For Use
Frozen textures: Mix everything containing water and sugar. I freeze. Each sugar crystallizes and produces a different texture in different negative temperatures. Sucrose produces large crystals braided, while glucose and production of small crystals of dextrose.Antifreeze potential: Sugars stop water of crystallization. Let soften ice cream, truffles and mousses or make them soft and spoonable negative temperatures. Design ice cream comes to playing with sugars, sugar and antifreeze potential. Maintain moisture: Some sugars, mainly invert sugar helps keep the moisture of the dishes that is useful in the confectionery, ice cream and whipped mixtures. Exclusively for food use.
