Directions For Use
Pour the powder (previously mixed with other dry ingredients) on water while applying vigorous stirring until complete dispersion. Heat to 90ºC for complete dissolution. Never pour the liquid onto the powder. Exclusively for food grade. Any liquid preparation. It is a texture modifying agent: Gelling agent, thickener, stabilizer, suspending agent. Insoluble in cold water; insoluble in organic solvents or vegetable oils. It usually gels at temperatures below 60ºC and forms transparent and elastic gels. It shows reactivity with proteins. It has a tendency to syneresis. It is thermoreversible. It is not freezable. Cold jellies, gelled foam.
Storage Conditions
Storage in a dry place (humidity less than 60%). Temperature between 15°C and 25°C. Protect from light and odours.
