Directions For Use
Easily soluble in cold liquids up to 45ºC. It needs to be heated to a minimum of 85ºC to hydrate properly and obtain maximum texturizing characteristics. Exclusively for food grade. Acts as a thickener and gelling agent. It has some textural characteristics very similar to those of Agar-agar. - Resists temperatures above 70ºC, resisting the gelled texture. It is thermoreversible from 85ºC. - It does not add flavor to the liquid where it is applied. Provides a light brown tone in high dosages, only noticeable in colorless and transparent preparations. - Preserves the ability to gel in acidic liquids such as lemon juice or vinegar. Also in salty liquids like soy sauce. Dairy bases and even high-grade alcohols (from 0.8% dosage). Cold and hot, sweet and salty jellies, with different shapes (Fake caviar, macaroni, grated jellies, etc.), Gelled with pannacotta-type dairy, aspics. Jams and jellies. Sweet and savory gelled frostings .
