Isigny Sainte-Mère Mimolette Extra Vieille is an exceptional, long‑aged French cheese crafted from rich Normandy cow’s milk. Aged 18–24 months, it develops a firm, brittle texture with an intense, nutty character and deep caramelised notes.
Its iconic orange paste comes naturally from annatto, added during production in keeping with traditional methods.
Produced in the historic Isigny cooperative, renowned for decades of mimolette expertise, the Extra Vieille version offers powerful aroma, a robust flavour profile, and the striking appearance that has earned this cheese global acclaim, including multiple international awards.
