French Gruyère PGI is a pasteurised golden cheese with cherry-sized holes; its flavour is clear with fresh notes and a slight sweetness.
The cheese is ripened in two stages: pre-ripened for 15 days at a temperature of 8°C and 15°C to allow for the rind to form, and to prepare for ripening, the Gruyère is transferred to a warm cellar for one day at a temperature of 15°C. Once pea-sized holes start to appear, it is put into a cold cellar to control the fermentation.
