Description

A unique cheese made in the south of Cornwall, this cheese is pressed and brined and then wrapped in nettle leaves, hand-picked from the local area. The leaves are carefully brushed onto the cheese in a traditional pattern of concentric circles, attracting naturally occurring moulds which give Yarg its lacy good looks. As the cheese matures, the edible nettle rind imparts a delicate, slightly mushroomy taste. By the time it is ready to eat some five weeks after the process began, Cornish Yarg has developed a unique appearance, with shades of blues, greens and a dusting of bloomy white.

Directions For Use

PRODUCT APPEARANCE: Wheel/half-wheel/1kg truckle. Nettle covering produces distinctive rind. Natural grey, white, brown and green moulds often present due to natural mould ripening during maturation process. FLAVOUR: Mellow, buttery, creamy semi hard cheese with a slight sharpness combining with a unique background flavour, originating from the moulded nettle wrap. AROMA: A subtle lactic smell, with the nettles imparting a delicate slightly vegetative aroma TEXTURE: Creamy under the crust, yet firm and slightly crumbly in the centre. Body shall be fairly firm, but slightly crumbly with a fairly open texture.
