At 24 months, Parmigiano Reggiano reaches its "Classico" stage—where flavour, texture, and aroma are beautifully balanced:

Texture: Firm, crumbly, and slightly granular with visible crystals that give a satisfying crunch.

Aroma: Rich and nutty with hints of dried fruit and toasted almonds.

Flavour: Deep umami, subtly sweet and salty, with notes of browned butter, hay, and a touch of spice. It melts slowly on the tongue, releasing layers of complexity.
