A true winter indulgence, Vacherin Mont D'Or is a seasonal Swiss cheese made with pasteurised cow's milk. The traditional spruce bark belt, which encases it, imparts a subtle woody aroma and helps the cheese maintain its shape as it matures to a luscious, runny texture.
Bake the cheese in its box for a showstopping centrepiece, simple score the top, add garlic and white wine, and roast until molten. Its delicate, creamy paste and mild, earthy flavour make it ideal for festive sharing menus, cheese boards, or as a luxurious starter.
