Black Garlic cloves are processed by ageing in an oven before maturing, when the characteristic taste and texture develops. They are suitable as a ready to eat product or an ingredient. Physical Characteristics: Cloves are black in colour as a result of the ageing process Texture: Cloves are soft; ‘buttery’, smooth, sticky. Taste: Fruity and ‘tangy’: Liquorice, molasses, currants, prunes. Aroma: Fruity with a mild hint of garlic, which does not result in ‘garlic breath’.
