Seville Oranges are a seasonal winter citrus from Southern Spain that bring vibrant tang and aromatic intensity to professional kitchens.
Bursting with tart, slightly bitter flesh and fragrant, oil-rich peel, they are prized for marmalades, glazes, sauces, dressings, marinades, cocktails, and even savoury dishes such as fish or duck. With their high pectin content, they set reliably in preserves and add bold lift to meat dishes, vinaigrettes, and reductions.
Available from December through February in the UK, with peak intensity in January, Seville oranges can be frozen whole, zest and juice, to preserve their flavour beyond the season.
