Ortiz Maestra Cured Anchovy Fillets are Grade AAA Cantabrian anchovies, caught in season (April- June) when the fish are at their peak fat content and flavour. These extra-large fillets are matured in barrels for a minimum of 6 months, then meticulously hand-filleted and packed in premium olive oil by master processors.
