Sosa Inulin Hot

Inulin Hot is of 100% natural origin and has a neutral flavour. Inulin Hot has a high level of texturizing properties, giving it a fatty sensation in the mouth. Used as a fat substitute in pastries, creams, ice creams and more.
Dosage: 50-200 g/kg.
Chef's tip: Add to a liquid and stir vigorously, heat to between 50 and 70 °C for better dispersion. Once added to the liquid, leave the mixture at 5 °C for 2 hours until fully hydrated.

Directions For Use
Dissolve in liquid at 70°C for it to completely break up. / It has a gel forming property that retains large amounts of water. Any production with aqueous or fatty content. Exclusively for food grade. It is hydrated in cold with strong stirring for a minute (mixer), act warm and leave at rest for a minimum of 12 hours in the refrigerator. 100% freeze after 12 hours rest to the refrigerator. It is thermoreversible between 35 and 40°C. It prevents syneresis while defrosting. Substitute for fats in mousse, ice-cream and creams. Fat-free creams. Bulking agent.

Storage in a dry place (humidity less than 60%). Temperature between 15°C and 25°C. Protect from light and odours.
