GELLING POWDER FOR FRUIT BASED PREPARATION
Directions For Use
Mix the pectin with the sugar. Incorporate the pulp with strong stirring. Bring to a boil and add the acid. Especially suitable for the manufacture of confectionery products with or without pulp, at a dose of 1 to 2%. Exclusively for food grade. Obtained from citrus peel. This specific type of pectin has a low setting temperature compared to standard pectin and therefore offers significant advantages in confectionery handling and production. Gelation occurs by adding acid in solution as a final step after cooking. Thermo-irreversible. Gummies, fruit pastes and bakeable fillings.
Storage Conditions
Storage in a dry place (humidity less than 60%). Temperature between 15°C and 25°C. Protect from light and odours.
