GELLING POWDER FOR MOUSSE PREPARATION
Directions For Use
Add the powder to the base cream of the cold mousse. Mix and heat between 90 to 100ºC while continuing stir. Allow to cool between 50-60ºC and mix with the aerating part with enveloping movements. Pour in molds or container chosen and cool. It can be frozen without producing syneresis. Exclusively for food grade. It allows the gelation of all types of mousse with a wide pH range. It is a hydrocolloid product by which should always be applied to the aqueous part of the recipe. It is advisable to provide the aerial part of the mousse through a meringue made with protein vegetable, allowing to work at high temperatures and allowing sufficient time for incorporation complete of the aerating part and distribution in the desired containers, before the gelation. Storage in a dry place (humidity less than 60%). Temperature between 15°C and 25°C. Protect from light and odours.
