Baking Instructions
1. Tray Arrangement
Place 12 items evenly spaced per tray.
2. Direct Proving Option
Prove directly for 2 hours to 2 hours 15 minutes at 27–28°C, with 70–80% humidity.
OR
3. Controlled Proving Option
Prove under controlled conditions for 1 hour 45 minutes to 2 hours at 27–28°C, with 70–80% humidity.
4. Egg Wash
Gently glaze the brioche with egg wash to achieve a glossy finish.
5. Preheating
Preheat the oven to 190°C.
6. Baking
Bake for approximately 12–15 minutes at 150–160°C, with the damper open, until evenly golden.
7. Resting
Allow to cool for 15 minutes at room temperature before serving or packaging.
