Yorkshire Blue is a full fat, soft blue veined cows milk cheese, presented for sale in foil wrap.
Directions For Use
It is recommended that once the cheese is cut it is sold within 10 days. Appearance: The cheese itself has a creamy body, with a smooth appearance when cut. Distinct blue veining will be visible. Rind is present on the cheese. Some mechanical holes may be present. Flavour: Rich, smooth, round complex, blue cheese flavour, with sweet tones Body/Texture: Close texture, firm but soft and creamy

BRIEF DESCRIPTION OF MANUFACTURING PROCESS Milk – Cows Milk pasteurised at 74 degrees Celsius for 15 seconds Acidified with lactic acid starter culture Coagulated with rennet enzyme (non-animal) (Non GMO) Curd cut, and placed into moulds, drained without pressure. Rub salted Cheese spiked and left to mature Foil wrapped Packed into corrugated outers Stored at 1-5oC from where it is despatched Raw milk is purchased from NDFAS assured farms. Pasteurised milk also regularly tested for phosphatase enzyme. Micro Tests on all mature batches of cheese before despatch, no cheese despatched if it does not meet Shepherds Purse Micro Standards. All personnel wear protective clothing. All staff members hold the basic food hygiene certificate. Regular-recorded checks are carried out on temperatures of refrigerated stores and bulk milk storage tanks. pH checks carried out on cheese to identify ‘slow vats’. Glass audit carried out weekly. Microbiological swabbing schedule in place to verify efficacy of cleaning. Metal detected: 4mm ferrous
