Brie Full Wheel (Pasteurised) is a traditional French Brie from Montsalvy. It offers a creamy, velvety texture with a delicate, earthy aroma.
Its full wheel format is ideal for professional kitchens and cheese counters, delivering consistent quality and a rich, buttery flavour that pairs beautifully with fruit, charcuterie, or fresh bread.

Brie is often called the “Queen of Cheeses,” and for good reason — it’s one of those classics that’s been loved for centuries and still holds its place on any serious cheese board.

1. Origin & tradition

Originally from the Brie region of northern France.

A soft-ripened cheese, meaning it matures from the outside in.

2. Appearance

Rind: Thin, edible white bloomy rind (Penicillium candidum) that’s soft, slightly powdery, and mild in taste.

Paste (interior): Pale cream colour, smooth and creamy when ripe, firmer and chalkier when young.

3. Flavour profile

Mild, buttery, and creamy with subtle earthy and mushroom notes from the rind.

Flavour deepens with age — young Brie is fresh and milky, while mature Brie develops stronger, almost nutty and ammonia-tinged aromas.

4. Texture

Soft and spreadable when fully ripe.

Melts beautifully — works in both sweet and savoury dishes.

5. Milk source

Traditionally cow’s milk, but variations exist with goat’s milk or blends.

6. Maturation

Ripens in about 4–6 weeks. Best eaten when the centre has softened but isn’t runny all the way through.

7. Serving tips

Serve at room temperature to bring out its full aroma and texture.

Pairs beautifully with crusty bread, fresh figs, grapes, and Champagne or light reds like Pinot Noir.
