The slow curing process develops thyroxine crystals, a hallmark of artisanal ageing, and a flavour that is fine, juicy, and persistent. The ham is cured for up to 36 months in natural drying rooms.
The boneless format makes it ideal for precision slicing, bulk prep, or refined plating. Use in charcuterie boards, or canapes, or as a luxurious topping for warm dishes.
Slice thinly and serve at room temperature. For best results, allow the ham to breathe for 20 minutes before plating.
