Acquerello Rice is aged for 1 to 7 years. This long process makes the starch, proteins and vitamins in the rice less water-soluble, strengthening the structure of the grains. This means that Acquerello Rice has the nutrients of brown rice with the easiness of cooking white rice. As it does not become sticky and mushy when cooked, it is ideal for making paella and risotto.
