Recipe uses HUG Medium Sweet Round Filigrano Butter Tart Shells 5.3cm and makes 24 pieces.
Five Spices Sponge
Ingredients
- 715g sugar
- 2.3g salt
- 475g whole egg
- 450g mayonnaise
- 5.5g lemon zest
- 28g 5 spices
- 28g baking powder
- 700g flour
- 315g pears, diced
- 600g carrots, grated
Preparations
Mix the sugar, salt, whole egg, and mayonnaise along with the lemon zest.
Sift the five spices, baking powder, and flour, then add them to the mixture above.
Afterwards, fold in the grated carrots and diced pears. Fill the desired amount into the tartlet moulds and bake at 170 degrees Celsius.
Mousse
Ingredients
- 250g milk
- 250g cream
- 120g egg yolks
- 62g sugar
- 10g anise
- 8g gelatine
- 400g milk chocolate
- 500g cream, whipped
Preparations
Prepare an anglaise based on the milk, cream, egg yolks and sugar till 84 degrees Celsius.
Infuse the anise seeds for 20 minutes and strain.
Add the dissolved gelatine, previously soaked in five times its weight in water.
Make a ganache with the melted chocolate and, at 40 degrees Celsius, fold in the whipped cream. Pipe into the mould and freeze.
Assembly
Remove the frozen ganache from the moulds and place on top of the filled tartlets. Decorate with piped tempered chocolate, orange zest and a small slice of pear.
